Indonesian Curry : Jakarta Spicy Chicken


Ingredients A

  • 400g chicken (minced)
  • 2 tablespoons Indonesian sambal paste
  • 4 chili padi (chopped)
  • 24 pieces basil leaves
  • 4 pieces daun salam
  • 100ml thick coconut milk
  • 1 tablespoon chopped lemongrass
  • Salt, to taste

Ingredients B

  • 8 pieces banana leaves (20cm X 22cm)(cleaned, scalded in hot water)
  • 8 pieces toothpicks


Method for Cooking Jakarta Spicy Chicken:

  1. Mix Ingredients A thoroughly, divide into 8 portions.
  2. Put one portion on one piece of banana leaf, wrap up and seal with toothpick. Repeat the rest.
  3. Place in steamer and steam for 15 minutes. Serve hot with white rice.
