Thai Curry : Chili Sauce


Ingredients A

  • 10 big prawns
  • 1 teaspoon sugar
  • Pepper, to taste

Ingredients B (mix)

  • 100g crispy flour
  • 100ml water
  • ½ tablespoon shredded lime leaves
  • 2 tablespoons oil
  • Salt, to taste

Ingredients C

  • Thai red sweet chili sauce (for dipping).


Method for Cooking Crispy Prawns with Thai Chili Sauce:

  1. Remove shell prawns, clean and cut a line at the back. Marinate with sugar and pepper.
  2. Heat oil for deep-frying, coat prawns with Ingredients B mixture, put into hot oil and deep fry until golden brown. Remove to drain.
  3. Serve hot with red sweet chili sauce.

Tip:

Fresh prawn's head should cling to the body, and shiny prawn shells are an indication of its freshness.
